Recipe: My Yummy Lemon Pancakes With Mango Sauce Make a Delicious Weekend Breakfast!

Here is a Lemon Pancake with Mango Sauce.


The weekends are when you want to spend more time together with the family and chat over a leisurely breakfast like serving my homemade lemon pancakes and mango sauce.  My pancakes are light, puffy and infused with lemon extract and a tad of cinnamon that nicely compliment the delicious homemade mango sauce with its incredible peach-like flavor that I like to make.

I love mangos, not only for their wonderful peach-like flavor, but also because of how good they are for your health.  They are high in fiber, low in calories, fats, and rich sources of vitamins A, C and E.   

One thing that you may surprise you is that the mango is related to poison ivy.  Therefore, if anyone in the family is prone to sufferer skin rashes, then always make it a habit to peel your mangos because the skin is what could be responsible for that reaction.


Another thing that I want to point out about a ripe mango is that this pancake sauce does taste good even without sugar for those watching their sugar intake.  I only add it because my guy prefers more sweetness.

Let your mango fully ripen to fully enjoy it.

Don’t think for one moment that the two recipes that I am about to share with you are complicated.  Ha!  Making pancakes happens to be simple and will save you money over buying a mix, a box from freezer section or one of those ready-made batters. As to making the mango sauce, all you will need is to pull out your blender to basically take care of it.


My Yummy Lemon Pancakes


2 cups of sifted flour
2-1/2 teaspoons of baking powder, leveled
½ teaspoon of salt
1 teaspoon of lemon extract
1/4 teaspoon of ground cinnamon
2-1/2 tablespoons of sugar
1 large egg
1-1/2 cups of milk
2 tablespoons of canola oil


Mary’s Pancake Mango Sauce:

1 ripe mango
3 tablespoons of sugar
the juice from one orange (about 1/3 cup)
1 teaspoon of vanilla extract

To Make the Pancakes:

Add the ingredients in a mixing bowl before taking your whisk or electric mixer and thoroughly mixing for a smooth batter.

Add about other three tablespoons of canola oil to fry your pancakes.  You can drop by a tablespoon or two at time for each pancake or use a measuring cup to drop the batter into your frying pan.  It depends what size pancakes that you like.  I prefer two tablespoons for each pancake.

To Make the Mango Sauce:

Peel the mango, cut in pieces and put in a blender, along with the orange juice, vanilla, and sugar and puree until you have the consistency of an applesauce.
