Do Make My Fabulous Raisin Filled Cookies and Watch Them Disappear!

The recipe that I want to share with you today will delight raisin lovers especially for its awesomeness.  It combines a cooked raisin filling housed inside a pie-like textured cookie that is delicately spiced with nutmeg.

I guarantee these cookies are so incredibly delicious that you will find them slowly vanishing even before you finish baking them!  Therefore, I advise caution and put aside a few for yourself or you might miss out sampling them later.

My Fabulous Raisin Filled Cookies

Cookie Dough:

1/2 cup of shortening
1/2 cup of margarine (not spread) or butter
1 cup of sugar
1 cup of packed brown sugar (light or brown)
2 eggs
5 cups of sifted flour
1 teaspoon of baking soda
1 teaspoon of baking powder
1/4 teaspoon of salt
1/4 teaspoon of ground nutmeg
1/4 cup of milk

Cookie Filling:

1 cup of raisins
1 tablespoon of cornstarch
1 teaspoon of vanilla extract
1 cup of water (cold)
1/4 teaspoon of ground nutmeg

To Prepare Cookie Dough:

Cream the shortening, margarine and sugars together until light and fluffy.

Beat in the eggs, one at a time, until well creamed and lemon colored.

Sift together the flour, soda, baking powder, salt, and nutmeg and add to the creamed mixture alternately with the milk.

Roll out and cut into 2-1/2 to 3-inch circles.

Place on a lightly greased cookie sheet, add filling, and bake in a 350-degree oven for about 10 minutes or until lightly browned.  This makes about 50 cookies.

To Prepare Raisin Filling:

Mix the cornstarch in the water and stir until dissolved. 

Then combine the filling ingredients and place in a heavy saucepan.

Boil all the ingredients until thickened.

Let the mixture cool well before using.

Fill two circles of the dough together with one teaspoon of filling inside.
