Recipe: Try My Easy Nutty Baked Chicken Because It’s a Winner!


This is a recipe that is healthy, delicious, packed with extra protein, and hardly any work. With all those things going for it, I think you can understand why this is one of my favorite ways to prepare chicken.  

The addition of ground oats and walnuts together gives it some crunch with just the right seasonings make for the incredible coating of this incredible baked chicken.  Another surprise ingredient is just a tablespoon of mayonnaise, which gives this recipe a delectable new twist of flavor.

Easy Nutty Baked Chicken


1/2 cup of oats (quick or old-fashioned)
1/4 cup of walnuts
3/4 teaspoon of paprika
3/4 teaspoon of thyme leaves
1 teaspoon of sugar
1/2 teaspoon of salt
4 bone-in chicken breasts (about 3 lbs. without skin)
1 tablespoon of mayonnaise or salad dressing

Take out your food processor and pulse the oats, walnuts, paprika, thyme, sugar and salt together.

Brush your skinless chicken breasts with the mayonnaise before dipping into the oat-nut coating mixture.

Lightly grease your pan and bake the coated chicken pieces in a 425-degree oven for about 20 minutes.
