Here’s a Fall favorite of ours for those that loved the
taste of that childhood favorite, Cracker
Jacks. My homemade version tastes
just as delicious with salted peanuts against honey sweetened popcorn that you
will find it hard to tell the two apart.
I do hope you decide to make my recipe sometime because I
think you honestly will be glad you did!
My
Homemade Cracker Jacks
¼ cup of honey
¼ cup of margarine (not spread) or butter
1-1/2 quarts of popped popcorn
¾ cup of shelled peanuts
2 tablespoons of light corn or dark corn syrup
Melt the honey and butter or margarine in a small
saucepan.
Remove from the heat and corn syrup.
Place the popped corn and peanuts in a large mixing bowl
and combine.
Pour the honey mixture over the popcorn-peanut mix to
coat thoroughly.
Spread the coated popcorn mix in a single layer on a
cookie sheet. (You will need several
cookie sheets or baking pans since this produces several batches).
Bake in a 350-degree oven for about 10-15 minutes until
crisp, depending on how your oven is regulated.
Cool and later store in an airtight container.
