Recipe: My Potato-Green Bean Microwave Casserole Makes a Tasty Side Dish!

Potatoes are always a nice side dish, but you can get tired of eating them the same old ways.  However, I made a really delicious alternative with my Potato-Green Bean Microwave Casserole that I want to share with you today.  Picture little cubes of potatoes, green beans, finely chopped onion immersed in a velvety cheese sauce that is lightly spiked with curry powder, black pepper and horseradish sauce to give it a subtle nip.  Together that mix is deliciously different and like all my recipes simple to make.

What else that is great about this recipe is that you can cook it one day and it reheats very nicely the next. This dish would go wonderfully when serving a ham or practically any variety of meat really or just as a light meal in itself.

Potato-Green Bean Microwave Casserole

6 cups of potatoes
1/3 cup of chopped onion
1 cup of Velveeta cheese, cut in cubes
2 teaspoons of butter or margarine
1 tablespoon of horseradish sauce
½ teaspoon of curry powder
1/4 teaspoon of black pepper
1 teaspoon of salt
1 tablespoon of milk
8 oz. of frozen green beans

Peel and chop your potatoes in little squares before layering some in a microwave-safe casserole dish with a lid.

Add some of your finely chopped onion over top the potatoes that you poured into your dish.

Now add some of the cheese and the butter that you distribute over the potatoes.

Repeat the process until combining all your potatoes, onions and cheese.

Finish by topping with you seasonings, horseradish sauce and milk.

Now cover the casserole and cook on HIGH for 10 minutes in your microwave.

Take out and stir to combine spices.

Return to the microwave and continue cooking on HIGH for another 10 minutes.

Take out and test how the potatoes are cooking.

Now is the time to add your frozen green beans.  Cook the casserole again on HIGH for another 10 minutes.

Take it out and test the potatoes.  It should be done, but depending on the size of how large your potato cubes are will determine the exact time.
