Recipe: Do Try My Chewy Brown-Sugar Oatmeal Bars

This recipe is easy, delicious and no-fail!


I have been baking up a storm adding to my Christmas cookie reserve.  This morning I just whipped up a batch of delicious bar cookies that I wanted to share with you.  My Chewy Brown-Sugar Oatmeal Bars has a minimum of ingredients and only cinnamon and vanilla, but has somewhat of a nutty taste that is delectable.  

What else I love about this recipe is how easy it is to make.  Basically, it is just assembling and mixing the ingredients.  The hardest part is waiting for the butter to soften enough at room temperature for creaming.

I hope that you will give my recipe a try because it is a great one to have on hand through the holidays.


My Chewy Brown-Sugar Oatmeal Bars


1 cup flour
3/4 teaspoon of baking soda, leveled
½ teaspoons of salt
1 teaspoon of cinnamon
3/4 cup of butter
1-1/3 cups of brown sugar, firmly packed (light or dark)
2 large eggs
1-1/2 teaspoons vanilla extract
2 cups of uncooked, old-fashioned oats

Cream the softened butter and sugar with your electric mixer thoroughly.  

Add the vanilla and then the eggs to your mixing bowl and beat until smooth.

Now sift the flour, leveled baking soda, and salt together in another mixing bowl.  Add a little at a time to your creamed mixture and beat in.

Next, introduce the oats and cinnamon to the mixture.  Stir in a little at a time.  You can beat this with your mixer or just incorporate with a large wooden spoon.

Pour the thick batter into a well-greased 9 x 13 x 2-inch baking pan.

Bake in a 350-degree oven for about 15 to 20 minutes, depending on how your oven is regulated.  

Test with a toothpick to see if anything sticks.

Give the bars a few minutes to cool in the pan before scoring and cutting into bars.

Recipe: Try My Three-Step Orange Bars With Candy-Like Icing When Making Your Holiday Cookies This Year

These orange bars are a cross between a pastry and candy.


Today, I have a really delicious bar cookie that you might want to try when doing your holiday baking.  My Three-Step Orange Bars recipe is relatively easy that involves just three steps.  This has a buttery pastry-like bottom crust.  The middle is a custard-like filling with walnuts, finely grated orange zest and shredded coconut flakes before finally being topped with a candy-like, orange confectioner’s sugar icing.  The icing is not your typical creamy butter cream, but a thicker one that hardens to give the bar more of a candy-like quality. 

I hope that you’ll be tempted to try my recipe because it is a very good one that always disappears quickly when guests arrive.

These bars are delectable, but they also are sinfully rich.
My Three-Step Orange Bars

½ cup of butter, softened
1-1/3 cups of sifted flour
3 tablespoons of sugar
3 large eggs
1 cup of brown sugar, packed (light or dark)
3/4 cup of chopped walnuts
3/4 cup of shredded coconut flakes
1 tablespoon of grated orange zest

Candy-Like Icing:

2-1/2 cups of confectioners’ sugar
1/4 cup of orange juice
1 teaspoon orange extract or 1 tablespoon of grated orange zest

Preheat your oven to 350-degrees. 

Mix the butter and flour with the 3 tablespoons of sugar into coarse crumbs as you would do for pastry dough.  

After you get that consistency, press into a 13 x 9 x 2-inches baking pan that is well-greased.

Bake this first layer of crust for about 15 minutes before removing from the oven.  Don’t turn it off because you’ll be returning it shortly to bake again once you prepare the custard filling.

To your mixing bowl, beat the eggs until frothy before slowly mixing in the brown sugar.  Continue beating and then incorporate the chopped walnuts and coconut flakes into the mixture.

Pour this custard filling over the baked crust and then return to the oven to continue baking for an additional 25 to 30 minutes, depending on how your oven is regulated.

Use a toothpick, cake tester or slender knife to check if anything sticks for determining if it is finished.

Cool completely before frosting with the icing.  The icing is a thicker one, more candy-like than creamy for these bars that does harden.

As that chocolate mingles with orange, the combination is like a celebration of two perfectly united flavors!


The kids had all the Halloween fun the other day with so many tempting varieties of candy that it got me craving something just as special and wickedly sweet only in cookie form.  Therefore, I just had to bake one of my favorite and easy bar cookies!  

Can you picture a delicate orange flavor infused in a golden brown sugar batter that is jam packed with mini chocolate chips?  Now imagine how one of those yummy bars would taste about now?  Am I making you hungry as well?

Recipe: My Spicy Applesauce-Molasses Bars Are Easy and Make an Ideal Lower-Calorie Treat!

My Spicy Applesauce-Molasses Bar is great when you want something yummy in a hurry that is not overly rich.


Trying to watch your weight and still enjoy sweets is possible with this easy treat that I want to share with you. This recipe will make only enough of these delicious bars to enjoy without overproducing to later tempt you, but they do keep well if you have any left the next day.  

My Spicy Applesauce-Molasses Bars are in between a dense snack cake and a bar cookie with just enough molasses and zingy spices to make the taste memorable, especially once topped sparingly with a butter cream frosting. 

My recipe only uses one-fourth cup of oil.  Instead, the applesauce serves to replace some of that oil’s missing moistening power that normally would have been necessary for baking.  If you don’t have any applesauce on hand, you can peel and cook a few apples (two medium ones) and make your own.

I hope that the next time you get the urge for something sweet and feel like baking that you will print out my recipe.  I do think that you will like it.

Recipe: My Incredible No-Work Banana Brownies Can Make Any Day That Much Better!

If you want to sample something deliciously different, then let me share a cherished recipe of mine for banana brownies that are moist, cake-like and also have butterscotch chips, nutmeg, lemon extract, and brown sugar bringing something extra to the mix. Just as sensational as their taste is how easy this recipe is to bake, which is a requirement in my kitchen.

This recipe doesn't require creaming since it uses oil and just involves mashing the bananas before mixing all the ingredients together.  In fact, you don’t even need to take out your mixer, but I give it a quickie round of mixing just to make sure I get any brown sugar lumps or bigger mashed banana pieces totally crushed.

Although you could use butter if your heart is set on infiltrating your brownies with butter flavor, I don’t feel it is necessary in this recipe considering the lemon extract, butterscotch chips and nutmeg within this batter.  

One last thing, I never frost these brownies because it is overkill to me with how rich these are.  However, you are the master of your own kitchen so do feel free to frost with your favorite cream cheese or vanilla frosting, if desired.

Feel free to use semi-sweet, milk or white chocolate chips for a different twist in my Incredible No-Work Banana Brownies.






1 cup of sifted flour
1 cup of firmly packed brown sugar (light or dark)
1/3 cup of canola or corn oil
1-1/2 teaspoons of baking powder, leveled
1 large egg
1 cup of mashed bananas (about two small bananas)           
½ cup of butterscotch chips

1/4 teaspoon of ground nutmeg
1 teaspoon of lemon extract

Preheat your oven to 350-degrees.

Also, you might want to grease your brownie pan or one about 9-3/4" x 6" now because it doesn’t take long before this recipe will be ready for your oven.

Mash enough bananas to make one cup.

Then add those bananas to your mixing bowl with the rest of your ingredients.  Stir with a fork or take out your electric mixer to incorporate everything.  The electric mixer helps smooth and catch any missed lumps.

When you batter is smooth and everything is well blended, then pour into greased pan and bake for about 25 minutes, depending on how your oven is regulated.  Test with toothpick, cake tester or slender knife to see anything sticks will tell if it is done.

Recipe: My Spicy Choco-Apple Bars Recipe Is a Delicious Way to Put Those Apples to Good Use!

My Spicy Choco-Apple Bars combines a few of my favorite flavors of apples, chocolate and spices in these moist, fruity bars.  This recipe is also another easy one that hardly requires much effort except for basic assembling of the ingredients, a bit of mixing, and peeling a few apples. The truth is the hardest part of making my bars will be waiting for them to come out of your oven!

I hope that when you are in the mood to bake and have apples on hand that you will want to print my recipe and give it a try because it is sinfully good.  


My Spicy Choco-Apple Bars

½ cup of butter
1 cup of sugar
2 large eggs
1-1/4 cups of flour
1 cup of rolled oats
1 teaspoon of baking powder, leveled
½ teaspoon of baking soda, leveled
½ teaspoon of salt
1 tablespoon of unsweetened cocoa
1 teaspoon of cinnamon
½ teaspoon of ground cloves
½ teaspoon of nutmeg
1-1/2 cups of peeled, finely diced apples (about four small apples)


Cream the butter with your sugar throughly.

Add your eggs next into that mixing bowl with the sugar-butter mixture and beat again. 

In another mixing bowl, sift all the dry ingredients together except the oats.

Stir in the oats along with the moist ingredients to the sifted dry ones until everything is well combined.

Add the finely chopped apples last to the batter and pour into a well-greased 12-3/4" x 9" x 2" baking pan and bake in a 375-degree oven for about 25 minutes, depending on how your oven is regulated.  Test if done with a toothpick.

Cool slightly before attempting to cut into bars.

Recipe: One Taste and You’ll Crave My No Work Double Butterscotch Bars Over and Over Again!

Here is a recipe that you don’t want to lose if you love the buttery sweet goodness of butterscotch.  My Double Butterscotch Bars are a decadent delight with so much butterscotch in the batter that only gets deliciously multiplied due to its butterscotch chips. Trust me, but you will fall in fall in love with these moist chewy bars for not only their incredible taste, but also for how easy it is to make my recipe.

Being the lazy cook that I am, this is another fantastic cookie bar that requires just a minimum of effort.  You don’t even need to bother taking out your electric mixer because my recipe uses oil instead of butter, margarine or shortening once again.  All you need to take out is your wooden spoon to incorporate the ingredients.

An easy way to grease your baking pan is to turn your emptied oil measuring cup over in the pan and allow it to drip while you finish adding the rest of the ingredients.  There is always enough of that oil to spread for this purpose.

½ cup of canola or corn oil
2 cups of sifted flour
3 teaspoons of baking powder, leveled
1 teaspoon of salt
2 large eggs
1 teaspoon of vanilla
1 tablespoon of milk
1-1/2 cups of light brown sugar, packed
½ cup of butterscotch chips




Preheat your oven to 350-degrees.  

In your mixing bowl, add the oil, sugar, salt, milk, vanilla and eggs to combine first before stirring in the sifted flour, baking powder and adding the chips last.

Pour into a greased 12-3/4" x 9" x 2" baking pan and bake.

Depending on how your oven is regulated, this recipe takes about 25-30 minutes or until a toothpick, cake tester, or slender knife inserted comes out clean.

Recipe: My Chocolate-Coconut Spice Bars Are Delicious Pleasures Meant to Be Shared!

Today, I have a very usual bar cookie for you. What is so unique about my Chocolate-Coconut Spice Bars is that the combination of chocolate chips, coconut flakes, nutmeg, and cinnamon adds a surprising, exotic raisin flavor to the mix that reminds me of those chocolate-covered raisins in Raisinets candy.

As you know, I love eating but hate laboring in the kitchen.  This is another one of those no-work recipes that you can create without lots of steps, fancy ingredients, or even needing to take out your electric mixer, if you don’t want to and prefer using a whisk.  Yes, there is no creaming involved, my friends.  This recipe calls for oil instead of butter, shortening, or margarine.

I really hope you print this recipe out because it is delicious. 


My Chocolate-Coconut Spice Bars



1 cup of sugar
½ cup of canola or corn oil
3/4 cup of flaked coconut
2 large eggs
1-1/2 cups of sifted flour
3 teaspoons of baking powder, leveled
3/4 teaspoon of salt
1 teaspoon of ground cinnamon
½ teaspoon of nutmeg
1 cup of semi-sweet chocolate chips
1 teaspoon of vanilla extract

Beat the sugar and oil with your whisk or electric mixer until creamy.

Stir in the eggs, one at a time, and beat to mix through again before adding the coconut flakes.

Add the sifted flour, baking powder, salt, spices and vanilla to the creamed mixture and combine to mix through.

Stir in the chocolate chips last.

Spread evenly and pour into a well-greased 12-3/4" x 9" x 2" pan.

Bake in a 375-degree oven for about 20 minutes or until a toothpick, cake tester or slender knife is inserted and comes out clean.

Cool in the pan for about five minutes before attempting to cut into bars.

Recipe: Today's the Perfect Day to Treat Yourself to My Sinfully Delicious Pecan Pie Bars!


I was going through my recipe boxes when I remembered this recipe for my Sinfully Delicious Pecan Pie Bars that I wanted to share.  Imagine that scrumptious flavor of pecan pie only in bar form where you can better control your portion size compared to a slice of that pie.  

Trust me, but this recipe is so incredibly good that I keep it in the back on my box to resist the urge to make it too often!  

I do hope you give a try because I am confident that you will also love it.


Sinfully Delicious Pecan Pie Bars


For the base:

1-1/3 cups of flour
½ cup of firmly packaged brown sugar (light or dark)
1/3 cup of melted butter or margarine (not spread)

For the pecan filling:

1 cup of chopped pecans
3/4 cup of dark corn syrup
2 tablespoons molasses
1/4 cup of flour
2 large eggs
1-1/2 teaspoons of vanilla extract
1/4 teaspoon of salt


To make the base:

Mix the 1-1/3 cups of flour, ½ cup of brown sugar and melted butter in a bowl together to combine before pressing into a well greased 9 x 13-inch pan.

To make the filling:

In another mixing bowl, add the pecans, corn syrup, remaining flour and brown sugar, eggs, vanilla, molasses, and salt and beat until well combined.

Pour over your base and bake in a 350-degree oven for about 30-35 minutes or until a toothpick or slender knife comes out clean when tested.

Let cool in the pan for about five minutes before cutting into bars.

Recipe: My Luscious Peanut Butter Bars Will Spoil You With How Yummy They Taste!

It’s been a long week and you deserve a tasty reward for hanging in there without complaint. How does the thought of digging into a delicious peanut butter bar cookie with a topping of creamy peanut butter icing sound about now?  If this also sounds like your bit of heaven, then my Luscious Peanut Butter Bars are in order!

Besides being relatively easy to make, these rich little gems are moist and chewy and utterly addictive.  I do hope you try them soon because they are that scrumptious!                        
Although you can use either type of peanut butter, I prefer the crunchy variety for both the dough and icing in this recipe to add more texture. If that is not peanut-enough for you do feel free to add the optional one-fourth cup of peanuts.

I also like to use butter (not a margarine) for this for that extra influx of buttery flavor, which really comes out in these bars.

My Luscious Peanut Butter Bars


1 cup of firmly packed brown sugar (light or dark)
1 large egg
½ cup of crunchy peanut butter 
½ cup of butter 
1 teaspoon of baking soda, leveled
1-1/2 cups of flour
2 teaspoons of vanilla extract
1/4 teaspoon of salt
1/4 cup of quick oatmeal
1/4 cup of peanuts (optional)


Cream the sugar, peanut butter, and butter until well mixed before adding your egg.

Sift the flour with the baking soda, which you had leveled with your measuring spoon.
  
Slowly add the flour, oatmeal, salt, vanilla, and peanuts (optional) until those ingredients are mixed in.

Lightly grease a 10 x 16 x 1-inch pan and bake in a 375-degree oven for about 15 minutes or until nothing sticks when you insert a toothpick, cake tester, or slender knife into it.

Wait about five minutes before cutting the bars.  However, do not remove from the pan until they cool enough for the icing.

To Make the Icing:

1-1/2 cups of confectioners’ sugar
2 tablespoons of butter
2 tablespoons of crunchy peanut butter
2 teaspoons of vanilla extract
3 tablespoons of milk

Cream the ingredients and then top over the cool bars.

This Arctic Weather May Get You Down, But My Divinely Delicious Peanut Butter Bars Will Pick You Back Up!

Thanks to this punishing Arctic cold spell, many of us are confined to our homes while watching all that snow fall and accumulate.  Instead of letting this weather ruin your weekend any further, I have just the thing to take your mind off the current situation.  Now is the perfect time to do a little baking and treat yourself and the family to a batch of my Divinely Delicious Peanut Butter Bars!  

These luscious peanut bars are soft, chewy and tasty enough to eat plain.  However, I like to sprinkle chocolate chips over the hot bars once it comes out of the oven so it melts over them.  Though as yummy as that sounds, I top that chocolate decadence with another layer of a confectioners' sugar and peanut butter icing to compliment the bars even more.

Do try my recipe because I think you will love it.

Divinely Delicious Peanut Butter Bars

1/2 cup of margarine (not spread)
1/2 cup of sugar
1/2 cup firmly packed brown sugar (light or dark)
1 egg
1/4 teaspoon of salt
1/2 cup of peanut butter (creamy or crunchy)
1/2 teaspoon of baking soda (leveled)
1-1/2 teaspoons of vanilla extract
1 cup of flour
1 cup of quick-cooking oats

First Icing:

1 cup of chocolate chips

Second Icing:

1/2 cup of confectioners' sugar
1/4 cup of peanut butter
1/4 cup of milk
1/2 teaspoon of vanilla extract

Cream together the margarine, sugar, and brown sugar thoroughly with your electric mixer.

Add the egg and beat through before adding the 1/3 cup of peanut butter, salt, vanilla, and oats.  Sift the flour with the baking soda and finish combining with the other ingredients.

Grease a 9- x 13-inch pan.

Spread the batter in your pan and bake at 350 degrees for about 20-25 minutes until nothing sticks when tested.

While the bars are still hot, pour the chocolate chips over them and spread to melt in.

Beat all the ingredients for the second icing together in another mixing bowl until creamy.

Wait until the bars cool a bit before drizzling and spreading this second icing over your bars.

The Perfect Holiday Indulgence for Your Sweet Tooth--My Wickedly Delicious Coffee-Almond Bars Supreme!

The holidays are the ideal time to start baking all sorts of heavenly treats to have on hand like a variety of delectable cookies.  One of the best bar cookies that I ever made is this particular recipe for my Coffee-Almond Bars Supreme that I want to share with you.  

It is a shame that there is no way that you can taste this fine-textured cookie through the computer with its intense almond and coffee flavor, clinging to every crumb, enhancing the peanut butter and brown sugar taste.  Adding some yummy chocolate chips to the equation does further compliment those ingredients and one out-of-this-world bar cookie is born!

Now I had made this easy recipe many times before with wonderful results.  However, I can honestly say Nielsen-Massey Vanillas pure extracts are so concentrated flavorings that it pumped up the taste beyond belief.  Any doubters to my claim, then I do challenge you to do your own comparison with your normal pure extracts and then make that recipe again with Nielsen-Massey Vanillas.  Once you do, I know you will want to have their wonderful products in your kitchen as well.  

By the way, this cookie does not have any eggs in it so don't think I missed an ingredient.  It does stick together.

When you do start your cookie baking, I hope you print my recipe and make these to serve your family and guests.  They will be nuts about them--and you for baking these.

My Coffee-Almond Bars Supreme

1 cup margarine or butter (not spread)
1 cup of brown sugar (light or dark)
1 teaspoon of Nielsen-Massey Vanillas Pure Almond Extract
1-1/2 teaspoons of Nielsen-Massey Vanillas Pure Coffee Extract
2-1/4 cups of sifted flour
1/2 teaspoon of baking powder, leveled
1/4 teaspoon of salt
1  6-oz. package of chocolate chips
1/4 cup of creamy peanut butter

All you do is cream your butter, sugar, extracts, and peanut butter with your electric mixture until well combined.

Add your dry ingredients and mix through before pouring in the chocolate chips.

Press into a greased 13" x 9"-baking pan and bake in a 350-degree oven for about 30-35 minutes, depending on how your oven is regulated.

Test with a toothpick or a slender knife to see if anything sticks.

My Zucchini Double Chocolate Bars Are Delectable and Easy to Whip Up!


Before all the wildlife decided my garden was their feeding station, I used to make this recipe quite often when I had lots of homegrown zucchini.  These yummy chocolate bars are the perfect solution when you run out of ideas for what to do with all of those zucchini.  

You will find my zucchini bars moist and bursting with added chocolate awesomeness from chocolate chips.  What further compliments the flavor is the blend of spices and molasses, which does wonders to enhance the chocolate and add something extra to make it special.

Though I love to bake, I hate complicated recipes and prefer simple ones.  Trust me, but the hardest part of this recipe is rooting through your pantry and refrigerator to assemble your ingredients.  Of course, I am forgetting another step.  You will need to grate the zucchini.  Other than those steps, you basically just mix the ingredients together.

If you don't have any sour milk that you hate to waste, then add about a  tablespoon of lemon juice or white vinegar to the cup of milk.  Stir and give it a few seconds before it will curdle for you.

I know you won't be disappointed if you do decide to make it!

My Zucchini Double Chocolate Bars

3 eggs
1 cup of sugar
2 cups of flour
1/2 cup of brown sugar (light or dark), firmly packed
1/2 cup of canola oil
2 tablespoons of molasses (light or dark)
2 teaspoons of vanilla extract
3/4 cup of sour milk or buttermilk
2 cups of grated, drained and peeled zucchini
1 teaspoon of baking soda, leveled
1 teaspoon of baking powder, leveled
1 teaspoon of ground cinnamon
1/4 teaspoon of ground nutmeg
1/4 teaspoon of ground ginger
1/8 teaspoon of ground cloves
1/4 cup of unsweetened cocoa
1 cup of chocolate chips

Beat the sugars, oil, eggs, milk, and vanilla with your electric mixer thoroughly. 

Sift the flour, baking soda, baking powder, cocoa, spices together in a large mixing bowl.

Take your dry combined ingredients and add to the creamed mixture.

Next, stir in the grated zucchini and chocolate chips.  Mix until all the ingredients are well combined.

Pour your batter into a greased 9" x 13" pan.

Bake in a 325-degree oven for approximately 45 minutes.  Test with a toothpick, cake tester or a slender knife to see if anything sticks judging it is done.
