Recipe: My Easy Pineapple-Walnut Snack Cake Can Make Your Weekend Extra Special

This cake stays moist and chalked with fruit and nuts.


This delicious recipe is perfect for anyone in the mood for an easy cake that can be whipped together without much trouble.  My Easy Pineapple-Walnut Snack Cake doesn’t require creaming butter and sugar or spending time with your mixer too long before it will be ready to go into the oven.  

You’ll find it stays moist from the crushed pineapple and has a delightful bit of chew from the walnuts and raisins.  

This cake is good plain or topped with your favorite creamy, white icing.  Whatever you prefer, you can’t go wrong because it tastes great either way.

Put it to the test sometime because it is very good, especially when you’re dying for a good cake but not the work that comes with making one.


Easy Pineapple-Walnut Snack Cake


3 large eggs
1-1/2 cups of sugar
1 cup of corn oil
2 cups of flour
1 teaspoon of cinnamon
1 teaspoon of baking soda, leveled
1 teaspoon of baking powder, leveled
½ teaspoons of salt
1 teaspoon of vanilla
1 can (20-oz.) of crushed pineapple in natural juice (not drained)
½ cups of chopped walnuts
½ cups of raisins


Beat eggs, sugar, cinnamon, vanilla, and oil in your mixing bowl first.

Sift together flour, baking soda, baking powder and salt next and add to the egg-sugar mixture.

Fold in your can of crushed pineapple and chopped walnuts next before pouring into a well-greased 13 x 9 x 2-inch pan.  

Bake in a 350-degree oven for about 40-45 minutes or until a toothpick, cake tester or slender knife inserted comes out clean.

Set aside and cool before topping with your favorite creamy white icing.

If you read me regularly, then you know how much I hate long, drawn out recipes that keep me in the kitchen for more time than I feel necessary.  I also make it a point to avoid gourmet recipes that call for exotic ingredients that are hard to find where I might shop or be too expensive to pull an average dish together. The recipes that I share are always ones that are easy and won’t cripple your food budget at the same time while tasting great.  This is the Nuts 4 Stuff way because deliciousness shouldn’t mean that you have to wait, work too hard or over spend just to enjoy food like the recipe that I have for you today.

My Easy Quick Carrot Snack Cake has chopped walnuts, brown sugar, orange juice and the help of vanilla and lemon or lime extracts to elevate the flavor and take it slightly in a fresh direction.

This is the time of year when cabbage is very reasonable so I made this recipe that I’m about to share with you.  My Country Cabbage Casserole has plenty of finely chopped onions and chopped cabbage browning to provide a wonderful subtle sweetness to offset the cottage cheese and curry-like turmeric, salt, pepper and sugar before meeting with the macaroni, giving it a unique taste that we love here.

Recipe: My Molasses Cake Is Deliciously Different With a Spicy, Nip That You'll Love!

This is a rich, fragrant snack cake with something extra!


If you love spice cakes and want to try one that is dark, rich and bursting with flavor that has an extra spicy kick, then you need to try this family pleasing sheet cake of mine. My recipe won’t keep you stationed in the kitchen all that long either or going through countless steps to turn out one cake.  It is not my style.  I like simple, easy recipes that also need to taste great like this favorite of ours.   

My Molasses Cake hardly takes much work and stays moist with the help of some plumped raisins and added goodness of chopped nuts, if you have some on hand.  With ample molasses, brown sugar, plenty of fragrant spices and mapleline flavoring besides coffee to plump up the raisins, the taste is just incredible.


My Molasses Cake


3-1/2 cups of sifted flour
2 cups of brown sugar, firmly packed (light or dark)
1 cup of molasses, (light or dark) 
2 cups of freshly brewed strong coffee
3 large eggs
2 teaspoons of baking soda, leveled
2-1/2 teaspoons ground ginger
1-1/2 cups of raisins
1 cup of chopped nuts (if desired)
1 teaspoon of mapleline flavoring
2 teaspoons of ground cinnamon
2 teaspoons of ground cloves
1 teaspoon of ground nutmeg
½ teaspoons of black pepper
3/4 cup of corn or canola oil


Plump your raisins in the hot coffee first.  While they are soaking for a few minutes, get a mixing bowl and add the brown sugar, molasses and eggs at a time and beat through until incorporated before alternating with dry ingredients, egg mixture, oil, and the coffee plumped raisins and remaining ingredients.  

Grease a 13" x 9" pan and bake in a 350-degree oven for about 35-40 minutes, depending on how your oven is regulated.  Test with a toothpick or slender knife to see if anything sticks.

Frost with your favorite white or maple flavored icing.

I was in the mood to bake so I began rooting through my recipe boxes.  Yes, I have tons of recipes that I transferred to three by five-inch cards from my massive cookbook collection.  I did this because I kept forgetting which cookbook had the recipe that I was hunting for.  This way, I just put a date and star by the card and put in the appropriate box so I can find it more easily.

When you want an explosion of flavors in one deeply satisfying cake, then you need to try my Spanish Bar Cake.  This rich, spice moist cake  is loaded with plumped raisins before being finished with your favorite creamy white icing.

Just like my other recipes, this is another easy cake to bake.  Basically, you just measure, boil, sift, and stir the ingredients before depositing in your cake pan and baking.  In fact, you don’t even need to take out your electric mixer.  Instead, you can just stir with your wooden spoon, if you care to.

Recipe: My Just Another Delicious Chicken/Turkey Casserole Is One That Comes in Handy for Thanksgiving Leftovers!

With the high cost of food, casseroles are an ideal way to use your leftover meat and poultry and turn them into a completely new dish.  They also make easy dinners by basically just throwing ingredients together before baking or cooking on your stove or microwave.  The recipe that I have for you today is one that I think you will want to save after Thanksgiving might leave you with too much turkey.

My Just another Delicious Chicken/Turkey Casserole uses a lot of raw potatoes instead of any form of pasta or rice.  The spice combination of curry powder to sage in a creamy mushroom cheese sauce, lightly accented with just a bit of sour cream, also adds a unique flavor to play against those potatoes, chicken, onion and hard-boiled eggs that will surprise you once you get your first taste of this hearty dish.

The kids had all the Halloween fun the other day with so many tempting varieties of candy that it got me craving something just as special and wickedly sweet only in cookie form.  Therefore, I just had to bake one of my favorite and easy bar cookies!  

Can you picture a delicate orange flavor infused in a golden brown sugar batter that is jam packed with mini chocolate chips?  Now imagine how one of those yummy bars would taste about now?  Am I making you hungry as well?

This morning I was in the mood to bake, but  I wasn’t sure what it would be.  The only thing I knew was that it had to be something easy and bursting with chocolate.  After scanning through my recipes, I finally decided on the perfect one. 

My No Work Chocolate-Peppermint Drops are puffy cookies, but not soft or hard. These yummy delights have a wonderful, in between texture brimming with finely, chopped walnuts and flavor fortified with peppermint extract, which magnificently compliments the chocolate.

My Spicy Salmon Patties have a unique, special flavor!



Salmon is a fish that we really enjoy at our house whether as steaks or in a can for casseroles, loaves to patties.  It is just one of those fish that you can do so much with when it comes to figuring out a healthy, reasonably priced dish to serve.

A unique combination of spices from ginger, garlic powder, turmeric to a tad of dill together with crushed saltine crackers gives my Spicy Salmon Patties that remarkable, different taste and texture from what you may expect if you used breadcrumbs or flour.

Now is the prime to take advantage of blueberries.  If you love their awesome flavor as much as I do, then you got to try my cake.  My Blueberry-Coconut Dream Cake has everything that you want with its moistness and delicate, fine-texture from its gently spiced nutmeg and lemon batter for hosting luscious, juicy berries and coconut in style. 

For this recipe, I do something different and use some coconut flour in addition to the all-purpose flour for firing up more coconut flavor.  However, if you don’t have coconut flour on hand simply take it out of the recipe and eliminate the water.  Don’t add more flour to replace it and it will turn out beautifully for you.

Basically, the only work involved is boiling up your eggs and macaroni and chopping the onion and celery. What more could a busy woman ask?

My Easy Tuna Salad comes to life thanks to the tasty combination of just a little soy sauce and red wine vinegar to your basic salad dressing along with green beans, onions and celery among its ingredients.   A few tablespoons of milk help keep the mix moist without the need for lubricating the salad with more salad dressing.

Recipe: My Lemon-Lime Cream Pie Can Make Any Day That Much Better!

Here is a piece of my yummy Lemon-Lime Cream Pie.

Today, I have a really scrumptious pie to tickle your palate.  My Lemon-Lime Cream Pie recipe is a beautiful marriage of a fruity lemon or lime meringue pie boosted to super flavor from its clear citrus filling made that much better in a creamy, velvety pudding like texture along with plenty of grated coconut flakes for extra delicious impact.   

This is another very simple recipe that involves prebaking your pie shell first before cooking up the pie filling. After that, you just wait for it to cool before storing in your refrigerator until it is thoroughly chilled.

I hope that by now you have decided to try my foolproof, oil pie crust recipe.  Another great thing about this recipe is that you can stretch it thin to get one larger pie or two smaller ones.  Of course, your edges won’t be as pretty as would be for one since you have less dough to work with, but you will eat less crust!  You could get one ten-inch pie shell or two smaller shells from just one recipe of my oil pie crust.  

You will need to squeeze some fresh lemon and limes and zest.  I used one larger lemon and three smaller limes that once squeezed into juice produced two-thirds cups of liquid.  Be sure to strain because you don’t want that sour pulp in that luscious filling to spoil it.

As you might know, I am not a fan of winter or laboring too hard in the kitchen when there is no need. Today, I want to share a quick way that you can heat up after you come in from the cold with this easy quick dish. Though you may think this is just another plain, old mac and cheese recipe, I assure you that it is not.  My Special Nippy Stove Top Mac and Cheese may have the creamy, velvety texture and cheese, but I doubt it has red pepper flakes, onion, garlic, fresh mushrooms for extra protein, and my secret ingredient until now of just a little salad dressing to heighten the flavor.

What else I think that you’re going to love about this delicious change from your standard macaroni and cheese recipe is how simple and extra filling it is with adding a cup of onion, two cloves of garlic, and a half of pound of fresh mushrooms. 

You also may notice that this recipe has less cheese and milk instead of the richer half-and-half or evaporated milk to make it a bit more diet friendly with less calories and fats.  Trust me, I am a cheese fanatic, but you will not feel deprived of that cheese once you taste this.  In fact, I used 2-percent milk over whole milk and no one suspected.

Recipe: My Lime-Coconut Sugar Cookies Are Out-of-This World Delicious!

You're just in time.  Here's a plate of my Lime-Coconut Sugar Cookies!


If you think that one sugar cookie is just as good as the next, then you need to taste my recipe that I have for you today. My Lime-Coconut Sugar Cookies are tender, buttery with a fine texture that practically melts in your mouth accented with a subtle sprinkling of sugar mix that includes grated lime zest and coconut flakes.

As with all my recipes, this is another simple one that will not drive you crazy with many complicated steps to prepare.  Basically, this just involves combining ingredients once you grate the zest from one lime before shaping the dough into small balls.

You’ll be surprised at how easy this dough will be to work with.  It won’t be messy and leave your fingers a sticky mess or feel overly greasy like many other similar cookie dough recipes.   

Once you shape your cookie dough balls and place on your greased cookie sheet, you need to flatten them. You can use a bottom of a glass or cup, but what I like to do is to take out a manual potato masher to press each one down because it leaves a beautiful design on top with  nooks and crannies to better to hold my topping.

 I like to improvise when in a hurry.  This manual potato masher is also great tor potatoes.


Another wonderful thing about this dough is how versatile it is.  If you don’t care for lime or coconut, you can always experiment with another combination.  Orange and lemon also are yummy, but there are countless possibilities.

Recipe: My Spicy Applesauce-Molasses Bars Are Easy and Make an Ideal Lower-Calorie Treat!

My Spicy Applesauce-Molasses Bar is great when you want something yummy in a hurry that is not overly rich.


Trying to watch your weight and still enjoy sweets is possible with this easy treat that I want to share with you. This recipe will make only enough of these delicious bars to enjoy without overproducing to later tempt you, but they do keep well if you have any left the next day.  

My Spicy Applesauce-Molasses Bars are in between a dense snack cake and a bar cookie with just enough molasses and zingy spices to make the taste memorable, especially once topped sparingly with a butter cream frosting. 

My recipe only uses one-fourth cup of oil.  Instead, the applesauce serves to replace some of that oil’s missing moistening power that normally would have been necessary for baking.  If you don’t have any applesauce on hand, you can peel and cook a few apples (two medium ones) and make your own.
